I have my summer logs that I can post, but should I take new logs on my MAP 6 now that it's around freezing, or take new logs at MAP 0?

FOL doesn't matter. Leave it on map1.
AFR (Mustard): Here we have the AFR value. If you have opted not to run the AFR wire to the lambda make sure your Fuel Bias values next to map 6 chart are all set to 0. The JB4 uses a calculation of the Fuel Bias Values and ECU AFR to work out the true value of AFR. You may see spikes in this value on the gearchange which is a calculation delay bug on the JB4 firmware we sorting out so do not be alarmed with this.

Can anyone help me on this, my car threw an EPC light last night. I created a map6 on 93oct based on some of the posts I've seen on here for GTI's running stock hardware(no aftermarket down pipe).
I did the first 2 run's with the following settings:
1500 - 2.0
2000 - 3.0
2500 - 4.0
3000 - 5.0
3500 - 5.0
4000 - 5.5
4500 - 6.0
5000 - 6.5
5500 - 6.5
6000 - 6.0
6500 - 6.0
7000 - 5.5
FOL 50

I then added 0.5 psi at 4500 and did another data log and my car threw an EPC light and basically stopped accelerating at about 5500rpm. Here is the log and settings I used as it threw the EPC:
1500 - 2.0
2000 - 3.0
2500 - 4.0
3000 - 5.0
3500 - 5.0
4000 - 5.5
4500 - 6.5
5000 - 6.5
5500 - 6.5
6000 - 6.0
6500 - 6.0
7000 - 5.5

The EPC light went away once I slowed down. I scanned the car using my OBDEeleven and no faults out of the ordinary were shown. Is this just because I am running too much boost for a stock down-pipe? Or do I need to adjust FOL or is it just dirty fuel? Any help/advice is much appreciated
Increase FOL to 60.

Do I need to ease up on the MAP 6 tune at all?
