New Brake Pads...spongy pedal

Just had my brake pads replaced and now my brake pedal travel is greater than it was originally.

The car stops I just have to push the pedal further... any ideas? could it have air in the lines?

The mechanic who did the work I trust and he worked at VW for many years - is there anything different about the mk7 at all?
 
Front or rear?
Could be just air, but a mechanic like the one you mentioned would (should) know what a bad pedal feels like and correct it before letting the car out of their care or they're no mechanic at all.
Pedal travel can also indicate air in the system, with engine running and stationery PUMP the pedal fully several times in quick succession and see if it firms up. If it does its air.

Might take a couple hundred miles to break in. Are they OEM brakes? Its not clear to me you had them done at a VW new car dealer.

New pads on old discs? Bed them in carefully for some hundred miles.
Before you do this, press the pedal a couple of times as hard as you
can (of course with the car standing still). If it won't get better take
it back to your mechanic. Hope he did fit proper quality pads.

It was done by local specialist in VW (Ex VW mechanic) -

He installed Pagid (German) pads and to be honest now the car feels normal after driving for 400 miles...
