I love how relaxed the GTI driver is in the Video around 1 minute in, stage 2 I'm guessing it's around 300ish hp and he has one hand on the wheel, then he's putting up the window later, torque steer is not a problem, most other FWD cars with that kind of power would have driven off the road.

Might keep you from falling asleep, aside from that no.
It's beneficial to short shift a bit on stock turbo cars, but otherwise the DSG sport mode is pretty solid.

Well as shown in video, he's using manual mode, but not manually shifting whatsoever. So wasn't sure if there was an advantage to that over sport mode.
