VW shows a replacement cover for about $300 - 5GM881805RBBN.
Maybe replace the whole seat from a junk yard. Try car-part.com.

I would just go this route. The colors will be much brighter like the car is new again as well.

Called my dealer this morning, $475+ tax for just the driver upper seat cover and that was with a discount added. It’s over $530 list price.
