Stomping on the brakes on a lightly sprung and underdamped (for track use) street car is a great way to unsettle the car.

Which might be exactly what you want in tighter corners.

Might make for brown underwear in faster corners.

Unsettling the car is rarely what you want. If you're looking for more rotation, trail braking will help unweight the rear in a controlled manner.
Agree with this.
Trail brake oversteer is more progressive manner. You want to be smooth.

Back to basic on how do you brake. Do you just stomp hard? Or squeeze the brake pedal?

Once you master the basic, even single pot caliper is sufficient or even outbrake untrained driver with 6-pot caliper.
