If you're 6MT and want to launch your car when you dump the clutch instead of bogging off the line, then yes, disable it.

Turn it to disabled in Vagcom. Its under ABS module

The best I can do is normal with vcds, there isn't an option to disable it and no torque limitation option.

I don't know. 6mt guys found this to un-neuter the launch bogging.

DSG guys have launch control, so I'm not even sure it would matter for them.
