I think 220º-ish is the minimum acceptable operating temperature. Since water is the byproduct of combustion, ideally oil has to run above 212ºF to boil off the water.

However little enough of the water vapor that's a byproduct of combustion ever reaches the oil (via blow-by past the rings). Oil that's lubricating the moving parts of the engine gets a good deal hotter than it does in the sump, where the temperature is actually measured. Once the engine is up to any kind of reasonable running temperature this should be more than adequate to boil out any water. Most cars with conventional oil radiators have an oil thermostat set at about 190F.

Turbocharged cars like our don't have any problem getting heat into the oil.
