The car restricts the flow of coolant after engine start to bring up the temps to normal operating temperature as quickly as possible. That helps with efficiency and emissions.

Mine is up to 200*F with in 3 minutes. This is in normal urban driving 30 mph. and 1 or 2 stops. Want to see if I can get oil temp reading in the MFA?

But notice that the water temp gauge also lies. It is made to stabilize in the 200 and stay under normal circumstances to show the driver that everything is normal, but the water temp in normal conditions oscilates from out 89 to 100 celsius degrees. If it's out of this range, than the gauge starts indicating the overheating

The coolant gauge is incredibly useful. It's advised to not run AC or heat until you reach or start reaching 200F. Also, I wouldn't push past 3K rpm's until coolant reaches temp. Nice indicator that everything is nice and lubed up.
Fuck #3 toast btw.
