I had this problem at the track and disabled it by going into the ABS system and setting brake stability assist to off.
I used the steps found in https://www.golfmk7.com/forums/showthread.php?t=46905 and haven't seen this since!

I used Track Hacks video as a guide. It’s really helpful. Working with OBD11 is relatively straightforward once you get the hang of it. I created a spreadsheet of the changes so that it was easily reversible.

For me the “downhill” braking into turn 1 would get squirrely at VIR.

Lowered approximately 1", maybe less as I never remeasured after the springs settled. At last alignment put everything to stock tolerances so its as basic as it gets...
