It was slightly tedious trying to manage four fasteners at once.
I test fitted the spacers before settling on the current set up.
Accelerator pedal is 1" below the brake pedal at the moment.
Feels ok in the garage, may have to adjust the width and/or height after some real world testing.

Pedal easily comes out by removing a single fastener and disconnecting a wired connection.
Most definitely the best way to do this.
